Grandma's Mac and Cheese

6 c. cooked elbow macaroni
8 oz. grated sharp cheddar cheese
1/2 stick of butter
1 1/2 c. milk
3 eggs - beaten
s&p

Cook macaroni and drain.  Add 1/4 stick of butter stir till it melts and pour in baking dish (9x13)
Sprinkle some cheese on top.  Melt the rest of the butter in small pan and add s&p and milk. Heat, but don't boil.  Remove from heat and add eggs and stir.  Pour over macaroni and add rest of cheese.  Bake at 425 for 30 minutes.  

Napa Salad

1 large head Napa cabbage - wash and chop
2 pkg. ramen noodles (crush in pkg) -brown in skillet with butter
1 c. slivered almonds
5 green onions (diced)
1/2 c. sunflower seeds 

Put all in large bowl and add dressing when ready to serve.

Dressing:
1/2 c. oil
1/2 c. cider vinegar
1 c. sugar
2 t. soy sauce
1 t. sesame oil

shake well....





Taco Soup

2 lbs. ground beef
1 large onion
1 t. salt
pepper

Brown meat and onions and s&p in skillet.  Add following ingredients in a large pot or crock:

1 pkg. taco seasoning
1 pkg. ranch dressing (1 oz)
1 can corn or hominy (14 oz) - undrained
3 cans of chopped tomatoes (14 oz)
1 can kidney beans (30 oz)
1 can pinto beans (30 oz)
1 1/2 c. water

Add meat mixture and let simmer for 30 minutes or warm in crock.  Serve with fritos or tortilla chips with cheese on top... so great on a cold day - makes a lot and freezes well.

Kung Pao Chicken or Shrimp

Kung Pao Whatever

This is similar to PF Changs...yumm!

1 lb. chicken breast (cut in chunks) or shrimp
3 green onions - chopped
garlic
sesame oil
Kung Pao sauce
Hoisin Sauce
Hot oil (if you like it with some heat)
dried red chili peppers
peanuts (not salted)
steamed rice (we love jasmine)

Heat wok or pan over medium heat and drizzle sesame oil in and cook chicken or shrimp till done (shrimp only takes 3-4 minutes). Set it aside and throw in a small handful of peppers, onions, and garlic (however much you want, maybe  1 heaping T.) Pour jar of Kung Pao sauce and 1 T. of Hoisin and a tad of hot oil.  Stir all around and add chicken or shrimp back in.  Heat thru and toss in peanuts at the end.  Serve over rice and maybe some garlic snap peas!  oh so good!
